Pesto Topped Broiled Potatoes
  • 2 potatoes, 8 - 12 ounces each
  • olive oil
  • sea salt
  • Waterfield Farms Fresh Pesto Sauce
  1. Scrub the potatoes and cut each into slices about 1/2 inch thick.
  2. Put the potato slices into a saucepan, pour over boiling water to cover, and bring back to the boil. Cook for 5 minutes from the time the water boils, then drain thoroughly.
  3. Meanwhile, heat the broiler. Brush the potatoes all over with olive oil, then put them on a cookie sheet or a broiler pan and place them under the broiler.
  4. Broil on high for 10 - 15 minutes, until the potatoes are tender right through and golden brown, turning them as necessary. Remove from the broiler, sprinkle with sea salt, then serve topped with the pesto.
