- 2 potatoes, 8 - 12 ounces each
- olive oil
- sea salt
- Waterfield Farms Fresh Pesto Sauce
- Scrub the potatoes and cut each into slices about 1/2 inch thick.
- Put the potato slices into a saucepan, pour over boiling water to
cover, and bring back to the boil. Cook for 5 minutes from the time
the water boils, then drain thoroughly.
- Meanwhile, heat the broiler. Brush the potatoes all over with olive
oil, then put them on a cookie sheet or a broiler pan and place them
under the broiler.
- Broil on high for 10 - 15 minutes, until the potatoes are tender right
through and golden brown, turning them as necessary. Remove from the
broiler, sprinkle with sea salt, then serve topped with the pesto.
